When you use the screw-driver to push in the piston you need to mark the shank so you know how far the piston travels into the M/C. Transfer this depth mark onto the brake rod because you don't want too much travel on this rod to damage the piston as you can apply a lot of pressure with your foot. I like to set my push-rod depth so when the pedal is on the floor, I still have about 1/8" before the piston bottoms out.

Thanks Walt! It'll be a long time before my tub gets mounted on the chassis, I just want to get the brake system done and buttoned up so I can move on to the steering, then drivetrain. I'm sure fine-tuning the brake pedal and brake rod will come later on, after the tub is on, yes?

Yes after the tub is mounted but you still need that mark on the push-rod so you don't over travel with the pedal. The tub location when bolting down can vary slightly so that mark is critical for your guide to properly adjust the push-rod.
