I believe the little one below the hard line is for oil pressure and the other it water temp but I'm not sure. Please, help.

On the block that's where I have my oil pressure gauge plumbed in and on the head that's where my temperature gauge probe is.

Any recommendation to which oil pressure sensor should I use there?

If electrical then you should get the sensor that is designed for the gauge.

I prefer mechanical gauges for both oil and water. Nylon hose for the oil seems to last plenty long as long as you keep it away from hot items. Copper line can work-harden with time/vibration if its not routed well. The same goes for a capillary tube on the water temp gauge.
