That's a large base Rochester 2GC. They were used on some 231's , but since that one came off a 350, it would probably need to be re-jetted on a 231.

it has to be better than the 600 cfm i have on there now. let's just say it runs a tad rich. but i tell you what when i hit the gas it goes like a bat out of hell.

That should be a perfect match for the base of the carburetor to the top of the intake manifold. You should NOT need an adapter.
COOL JEEP GUY has it correct, you should get smaller jets for a 231.
There has to a chart that some here in the site has to purchase those parts properly.

Not enough info here to make that statement. Not all 231's used that style carb, and the OP said it's a 600 CFM on there now, implying a 4bbl. carb.

The small base 2G Rochesters were used on Dauntless v6, also Chevy 283 & 307.
(some others too, I'm sure, but those come to mind).
The larger one was used on most Buck/Olds/Pontiac V8s, & Chevy 350s.
I'm pretty sure that by the time the 231 Buick came out, everything was using the larger carb.
    It's easy to spot the difference-you'll have either a 2 5/8 diameter air horn, or 3 1/16.

Edit: Here's a pic of the two different carbs side by side.
