Great Job, Man. That's exactly how we used to build out all the " Chipolte's " , back in the Day !
I'm afraid you've got a double vapor barrier going on there, though . Did your Building Inspector say anything about that. Just Curious.

Being an out building, I’ve been done with having an inspector check in on me for a while now. Foundation, framing, weathered in... done. This is the third shop I’ve finished this way with the plastic liner and the siding panels. That’s not to say I haven’t been doing things wrong every time though. Guess I’d never thought of it as a double vapor barrier. The first two were in Minnesota and this one is in Colorado.

I'm just curious, is there anything wrong with this approach? The barrier is on the same side, so the only downside is added unnecessary cost, right? In my mind, it seems like a belt and suspenders sort of approach.

Been reading on this and I think you’re right. Climate, heating, and A/C would all be factors here. Being I’m in a dry climate where an A/C unit isn’t necessary I think I’m okay here. Agreed on the belt and suspenders... had a giggle over it too to try and distract me from the added cost and labor.

... ceiling of 100% done minus electrical. Trying to decide on lighting. The remainder of the wall panels were ordered last week as well. Really coming together!

These are amazing! I found mine at Costco. You could light up a baseball game at night with a few of these. I have 4...it's like being on the sun.

Ditch the tub for a shower. Kitchen is about two beer fridges short.

that kitchen is overkill as well, all you need is an old cookstove, which'll provide heat and cooking, and a few cabinets of food.
