Your Problems have been covered here many times............ No Rocket Science required..............Different manufactures of pressure plates have different basic ring heights........not by much but just the same different...............cutting the face of the flywheel or having worn out linkage parts and the problem grows..........Hence the reason most clutch linkage's are adjustable to take up that newly added slack.

You say your problem is " Not disengaging." The simple answer is , You do not have enough travel in your system or the travel portion needs to be adjusted where it is now needed most........

Think of your clutch linkage system from the pedal to the throw out bearing having a total given operating length with one end at "A" and the other at "B"............moving that length to the left of "A" or the right of "B" is totally acceptable to whatever your application needs keeping in mind ultimately you need enough travel at "A" to move the throw out bearing far enough into the pressure plate to release the clutch disc from the flywheel , while at the opposite end "B" when you release the pedal having enough "Free Play" to allow the TO bearing to have the clearance needed to stop and not run all the time.

Clutch cables do stretch over time that adds to the total length but in the wrong way...........Sometimes a different length bearing or collar may help or just a linkage adjustment.

If your vehicle is in a shop that cannot figure that out.......find another shop.
