I rewired my 71 with EZ Wire. Great product, easy to install, more affordable than Painless and very good customer service. I did mine in 1 & 1-1/2 days. I used a 12 circuit but if I did it over would go more, always adding stuff. I left the old wire in place, ran the new and then removed the old and finished it up. I also would not mount the fuse block in the original under dash location. I'm getting too old to get up under there. I have seen some mounted under hood in a waterproofed box.

I still like to build my own harnesses. A stock early Jeep is just plain dirt simple to wire. If it's something like my non-stock 3B, a stock type harness isn't going to cut it anyway. Even that one with full sequential EFI isn't that complicated. Just a lot more sensors.
Waytek Wire is the best place I've found for most automotive wiring supplies (thanks Terry for that lead long ago!!!!). And for the last couple of decades all my fuse blocks/terminals are either Metri Pack or Weather Pack (and again WAY cheaper at Waytek). I also have become fond of Bussmann's 15300 series fuse/relay blocks that can be ordered bused in several configurations or un-bused.

A while back I was needing another roll of primary wire. O'Reilly's-$21 & chinese, Waytek-$10 & USA. I have NEVER had a single problem ordering stuff from Waytek and they ship quickly. I buy 99% of my auto electrical supplies from them.

I will need some relays and other supples for the junk I am going to put together. Mouser, Allied and the like are a PITA to wade through all the different stuff to get to automotive..

I used EZ harness and did 21 on the 5. I will do a 12 circuit on the 6 and will add a power fused box for accessories.

Sounds like 12 would work. Not adding anything to it just keeping it stock plain and simple.

Have done several vehicles with the Bussmann- 10 fuses and 5 relays in an almost waterproof box rated to 125C. That box with high temp GXL or TXL type wire has provided the least long term problems. The issue is you need the correct crimpers for different wire size ranges and have to design your own harness.

I would take a look at Walck’s 4wd. I believe they make wiring harnesses in stock form up thru your model I think it showed on there web site

If it were my Jeep, I would first inspect the condition of the wires. If the insulation were not falling off the conductors, I would repair what I had. By 1971, the automobile manufactures were using vinyl insulation (PVC) and this will last a long time when not exposed to sunlight. So the wiring under the dash, under the hood and under the Jeep should be fine. The much earlier Jeeps used cloth-covered rubber insulated wire, and that stuff falls apart from exposure to pollutants and just plain oxygen in the air.

Pick some of the original wire to look at and see if it's still flexible, and if the conductor is still copper-colored when you strip it back. Even oxidized wire can be used if prepared with a little extra non-corrosive flux before soldering. Here's an article that may help you if you want to repair what you have: https://www.jeepforum.com/forum/f8/basic-wiring-101-getting-you-started-1340134/

If you want to add accessories not present on the Jeep originally, you can add a small panel. Fuse Panel & Terminal Strip Connector Types (Del City is another useful site for these products).

The po has patched up alot of it so it's time for a new one. Think I'm going with the walcks harness to keep it original and easy also

Get in Line to find your ,in Line fuses, so to speak. I used a virgin 66 wire harness from a 1966 donor Jeep to do my build. I wish I had put in a fuse box in and ran all my wires to one location. It seemed like a no brainer to use the "Factory", wiring harness, but if I were doing it again I would do it the right way. I now have to remember what I done and find the in line fuse holders under the dash. Not easy at 74 years old. I didn't add much to it but would like to have all my fuses in one place. I only added, a modern Radio, and electric wipers, the back up lights were already on my Jeep. I used factory Jeep light switches for the wipers, and the interior light, and back up lights. First click is low, speed and the second is high speed for the wipers, and the first click is interior light and the second is back up lights. My Jeep came with dash switches for them when I got it, don't if it was factory or not, it is a Tux. Good luck
