Honestly. I wanted to see that bright and shiny new (for all intents and purposes) engine back
    from the rebuilder.

Glad it all worked out for you. Bravo for keeping it original.

Do you have a fan shroud? What kind of radiator are you running? Have you checked for a lean condition?
Here in Nor cal we have lots of 100 -105 and higher days and I would get concerned if I cracked 210 degrees pulling hills at 55. Maybe I'm more conservative than most.......but you don't have much room for error there. Sounds to me like your still running too hot. Just my .02.......

A freshly rebuilt engine will run hot, once everything breaks in it should settle down.

I agree. Every new rebuild runs a little warm. Takes a bit to smooth out and run cooler. A shroud would help more when off road going slow, but might help at highway speeds. What weight oil you running and do you have a thermostat in place and if so how old is that and what temp. In summer time I run without a thermostat. Another question, when was the last time you changed anti freeze or did a chemical flush?

Crawling around in the +100 heat you may have some problems. I was having an overheating problem after my new cam install. Added a Champion 3 core, radiator shroud and set the timing by vacuum. Turns out the new cam likes 10 advance instead of 5. Now runs 20 deg cooler. Big difference especially crawling around in the summer desert.

Running a new 190 degree stat and I believe the shop put 30W in it. With the rule of thumb that a stat begins to open at XXX temperature and doesn't fully open until 10 to 15 degrees higher I'm thinking I'm sitting pretty close to norm on this new engine. Also shot the thermostat housing where the temp gauge sensor is mounetd with my temp gun and it was reading about 5 degrees less than the gauge was showing. Once I hit 500 miles, I'll do another oil change and probably go with 20-50. Now I'm looking for a wiper motor for the 3 days a year we get rain out here.

Sounds like you're happy with the temp. All I can say at this point is be careful if you go out wheeling in the hot summer. Crawling around will really push the cooling system and breaking down out there is in the best case just a pain in the butt. I would shut it down when you go above 220 and let the engine cool off a bit. Your going to be spitting all or your coolant out the cap which will escalate the problem.

I added an overflow canister and it works great if my cap opens. An overflow canister is also a good indicator because your cap should not open often enough to overflow the canister.

Why the 190 thermostat? Especially considering you operate in the desert southwest. Most guys here are running a 180.

What Temp Thermostat Are You Running ?

Yessir, put one of the Oreily Specials on it. So far, he stays around 200 on trails.

Aw, it's what the mechanic put in it. When I do the oil, I'm planning on setting up a 180 for summer here. About 75 more miles till time to do the change.
